Determination of Patulin and HMF in Fruit Juices by HPLC.

Determination of patulin and HMF amounts in processed fruits and products.
Cancer research centers have found that patulin is a component with acute toxic carcinogenic and mutagenic effects, and its short-term effects can also be found in Patulin apples, cereals, bread, cheese, pears, apricots, peaches and grapes. The amount of patulin determines the quality of the product in processed fruits and products. During the procedure, the amount of patulin should be reduced to acceptable limits.
